George Sykiotis has been involved in almost every sector of the hospitality industry, from simple cafes to hatted restaurants. Irrespective of the style of the venue, the paramount factor has been his commitment to service, delivering value to clients and creating a positive work environment.

George has been involved with hospitality from the age of 8 when his parents bought their first cafe in 1977, so to say food is in his blood would be an understatement. At the age of 23 whilst at Melbourne University undertaking his Commerce degree George opened his first cafe in Lonsdale Street Melbourne. Within 12 months the cafe became a focal point for the legal fraternity, and 6 months later was sold to allow George to finish his commerce degree.

After completing his degree and working in the corporate world for 2 years, George’s passion and desire for the hospitality industry saw him open his first large scale venture, Cafe Hydra at 480 Collins St which was a 200 seat eatery. It was an immediate success and this was the start of no turning back. Between 2000 and 2003 he established Yak Bar, Bisq, Bambu and Maio and Tazio all located in the Flinders Lane precinct .

In 2005 he approached George Calombaris with the offer of the vacant premises in the Herald and Weekly Times Building which would be The Press Club.  From that point onwards the George has been involved in some of Melbournes’ best dining venues: Gazi, Hellenic Republic, Maha, Burch and Purchese, Lucy Liu, The Smith, Lupino, and Jimmy Grants

George’s key role in the partnership is to develop the vision, assess the financial viability of the vision, locate the site, engage the architects and builders deliver the venue on time and on budget, work with the key members of management team with overall operations of the business. 

As the group grows this is a key focus in ensuring the ongoing success and momentum.
